Thai Fish Cakes - Although there are varied recipes around the world for yummy fish cakes, I insist you to try this authentic recipe as it is easy to prepare and has absolutely exotic flavors.

If you are a fish lover, this mouth-watering appetizer is an ideal for your home finger food, definitely! This authentic recipe has been used by many generations and it is still popular for all Thai family today.

To go along well with Thai fish cakes recipe, I strongly recommend the two dips; Ar-Jard and Thai sweet chili sauce. The two dips are very easy to make. I will always make the Ar-Jard which takes about 2-3 minutes and buy a bottle of Thai sweet chili sauce available in your local Asian stores.

Ar-Jard ingredients are included fresh cucumber, shallot and chopped chillies, white vinegar, sugar and salt. Thai Ar-Jard and sweet chili dips can be served with several Thai dishes such as spring rolls, satay....

I personally like seabass for this recipe, but any white marine fish will provide a fantastic taste when combined with my original recipe! A fresh fillet of seabass without skin is preferred.

You need to mince the fish then marinate with Thai herbs and a selection of spices before refrigerating for at least 30 minutes. You can either mince the fish fillet together with marinate ingredients or mix the marinate ingredients with minced fish in the mixing bowl.

The marinated mixture can be refrigerated up to 1-2 nights if you like to get things prepared in advance.

Ingredients:
Fish fillet without skin, minced 450 g
Thai red curry paste 1 ½ tbsp
Kiffir lime leaves thinly sliced 10 leafs
Cassava flour 2 tbsp
Plain flour 2 tbsp
Egg beaten 1
Stingless beans chopped ½ cup
Vegetable oil for deep frying 3cups
Thai sweet chilli sauce
Crushed peanut2 tbsp

Seasoning:
Fish sauce 1 tbsp
Salt 1 tsp
Sugar 1 tsp

Ingredients for Ar-Jard:
Fresh cucumber quartered and sliced ¼ cup
Shallots thinly sliced ¼ cup
Red spur chilli chopped 1 tbsp
White vinegar 2 tbsp
Sugar 2 tbsp
Salt 1 tsp
Warm water 1/3 cup

Let's get started!

How to make:

Step 1 – Marinate

  • Mince the fish and place it in mixing bowl.

  • Add red curry paste, fish sauce, salt, sugar, kiffir lime leaves. Knead fish and mixture evenly.

  • Add egg and beans. Knead evenly.

  • Refrigerated for at least 30 minutes.

Step 2 - Making Ar-Jard

  • Mix all ingredients for Ar-Jard in a bowl.

Step 3 – Deep fry

  • Heat the oil in the deep frying pan.

  • Wet your hand with water, then make a flat round lump (not to thick and thin)

  • Fry each side until nicely golden and floating.

  • Set on oil control papers.

  • Serve with Ar-Jard and Thai sweet chillies sauce.
